Located at Circular Quay, Tony Bilson's Number One Wine Bar & Bistro offers contemporary cuisine developed out of the refinement of traditional flavours, bringing the best of regional French cooking to the shoreline of Sydney Harbour.

Tony's favourite area of France has always been the south-west of France and the Basque country and he describes Number One as 'an ideal mix of Paris with a touch of Barcelona'. By virtue of being a bistro, Number One offers a more relaxed way of dining where customers can enjoy the comfortable environment and an informality of dining which allows them to have a formal meal or just graze.

Favourites on the menu include Duck Parfait, Escargot, Cassolet, Bouillabaisse, and Swordfish Nicoise.

Whilst the bistro menu is available for lunch and dinner, there is always the wine bar.
