Tiger Mottle cafe is quickly becoming the new hot spot in Paddington for a relaxed atmosphere with great coffee, fresh simple food and inviting service. If you’re tired of uber-chic cafes where baristas have more attitude than a French sommelier, Tiger Mottle will be a breath of fresh air and a hit of aromatic coffee.
Since opening in 2008, Tiger Mottle has attracted a cult following among coffee lovers and foodies alike. At the helm of Tiger Mottle is owner Pete Henderson, who, with more than ten years experience in the hospitality industry, is passionate about coffee and well-versed in the language of the bean. Having spent years working for boutique Sydney coffee company Allpress, Pete opened his first cafe in New Zealand with great success, before returning to Sydney to open this funky Paddington establishment.
All Tiger Mottle coffee is made using the double ristretto technique, which extracts the best flavour from the Golden Cobra beans and results in a decadently rich, sweet and full-bodied coffee. In fact, the cafe takes its name from the moth-like pattern that forms in the crema of an espresso shot when the liquid has been extracted with perfect finesse.
Sweet-toothed fiends can try the maple mottle, a double ristretto poured over a shot of maple syrup and chilli, then topped with double cream and dark chocolate. The Tiger Mottle menu is approached with the same passion and consideration as making the perfect coffee taking quality produce and creating simple but elegant meals.
Pete and the team use locally sourced and organic produce where possible. Chef Billy, formerly of Bondi institution Katipo, makes everything onsite, from the robust tomato sauce to the fragrant ginger bread. Dining at Tiger Mottle is not unlike being cooked for by a friend, each meal is thoughtful, approachable and refined, taking the experience of casual dining back to the roots of relaxed hospitality.
The ethos of Tiger Mottle is to make the simplest of meals the most impressive, by taking fresh ingredients and making them better. An avid music appreciator, Pete treats diners to beats from his own vinyl collection. The laid-back sounds add to the café's funky weekend vibe, inviting diners to unwind, sip coffee and savour every mouthful.
