Nuevo37's Executive Chef Philippe Perrey was 'born in a restaurant', helping out in the kitchen of his parents' restaurant in Switzerland from the tender age of five. Later, an apprenticeship in traditional Swiss technique was the natural evolution as his passion for food developed, and at 19 he flew the coop to Germany, to work as Comme Chef in a Michelin starred restaurant.
By 20, Philippe had moved to Barcelona, where his love of food was focused into a passion for Spanish cuisine. Shortly after arriving in Spain, Philippe met legendary chef Ramon Freixa and, during a nerve-wracking kitchen trial, impressed him so much that Ramon offered him a job starting immediately at prestigious Barcelona restaurant El Raco D'en Freixa. Philippe moved on with Head Chef roles around the world, most exotically in the Maldives, before ultimately taking the reins as Executive Chef at Nuevo37
