Maurice has had a myriad of experience starting in 1996 at The Kent and George Street Hotel. In 1997 and 1998 he worked as the Sous Chef for Donovan's and Toofey's. From 2000 through to 2002 Maurice was Head Chef at The European, Otto, Middle Brighton Baths and Stokehouse. He won Hats in 2003, 2004 and 2005 while at Stokehouse in The Age Good Food Guide. In 2006, Maurice became the Executive Chef at Il Baccaro and Sarti.
2007 through to the present day bought Maurice many new challenges, including becoming the Owner and Executive Chef for Esposito@Toofeys.
Maurice has a passion for food and that is evident in everything that comes out of the kitchen. Attention to detail is what sets Maurice apart from the rest.
Esposito's is arguably still the best seafood restaurant in town and this is all thanks to Maurice's hard work and dedication.
