Red Emperor Head Chef Hon Kau Hui arrived in Australia in 1984 to take position as Second Chef at Flower Drum. Kau has been with Red Emperor since 1995 and started as a kitchen hand at just 16 years old.
Today he prides himself on creative and innovative dishes from Chinese provincial specialties to a wide variety of vegetarian dishes, and of course his renowned seafood dishes that have helped Red Emperor win multiple awards over the past 15 years.
