Executive Chef Dan Hunter was awarded Chef of the Year in The Age Good Food Guide 2012 and The Royal Mail Restaurant received Three Chef Hats, having been voted Restaurant of the Year in the 2011 awards.
Dan Hunter started his career in Melbourne, Australia working at Langton's, and then Verge before moving to Barcelona in 2003 to work in the one-Michelin-starred restaurant, Caelis.
In 2005 he moved to the two-Michelin-starred Mugaritz, currently rated as the world's fourth best restaurant. Towards the end of his time there, he held the role of Head Chef for one year before returning to Australia.
Dan moved to Dunkeld in 2007 to focus on his own nature-focused cuisine based on his own-grown produce and reflecting the natural surrounds of the Southern Grampians.
